Typically I use Pianoteq with a full size fully-weighted keys midi keyboard (that doesn't have any mod wheel or knobs). That seems easier to me than using a real physical piano because I need to be constantly recording what I'm doing, and managing MIDI is easier than audio.

It was actually quite nice reading this. Perhaps the process might differ from one song to another, but more posts like this are always good. (Especially if put on the front-page.
